Crock Pot Lasagna

Well I discoved this fab recipe for Lasagna (you've got to know I HATE making dinner so anything that's fast AND good is a definate plus for me.) I got it from church and whoever made it up is a genius. Here goes.

1 lb. Hamburger
26(approx)oz. spaghetti sauce
1 can diced tomatoes
1 package oven ready lasagna noodles (do not cook before putting in crock pot)
1 1/2 cup cottage cheese
1 1/2 cup ricotta cheese
2 TBLs. parsley
1 bag mozzorella cheese (use as little or much to your own liking)

Brown hamburger, drain. Add spaghetti sauce and tomatoes (I used a quart of my own bottled tomatoes and just pulsed in the blender for a minute to chop up a bit) In a separate bowl mix the cottage, ricotta cheese and parsley. Spray the bottom and sides of the crock pot with cooking spray. Put a small amount of meat sauce on bottom of crock pot. Then layer 3 times in this order: Oven ready lasagna noodles(break to fit), hamburger mixture, cottage cheese mixture, and grated mozzarella cheese. Cook on low 4-6 hours or until noodles are tender (mine took 5 hours)

This made enough for two meals for my family of 5. Every one of my kids liked it a lot and I will definately be making this again. Yum Yum!

The 4th and a Boat trip












Well we had fun on the 4th going to the Magna parade and then a BBQ at my sisters house with all the family and then treated to fireworks once it got dark.
Then yesterday we took the boat out on Utah lake for an afternoon to cool off in the 96 degree weather. Fun was had by all. Sorry did the photos backward.

A Cool way to cool off!


Well I used the new kit "Freedom Festival" from Krystal Hartley who is a guest designer at The Digichick for July. I made these fans for my kids and their cousins for the big 4th of July Magna parade. Some of them can't come to the parade but I new they will be at the BBQ later and might feel slighted if they didn't get one so I just made them for all the kids (except Amy's kids who won't be around at all-we'll miss ya) It might rain but I say "Bring on the Heat"

Splash-Finally!




We have had a weird start to the summer. It has rained so much in June that I just barely got our pool up this last Saturday. But now it is very warm and the kids are having a ball. The kids jumped in as soon as there as enough water to wade in (and it was freezing cold out of the tap) Well they are my crazy kids- go figure. We also had our Beatie cousins here from Kansas.

Pie to die for!


One of my favorite things to make in the whole world is pies and I got the opportunity to start to teach my daughter how to make them too. I made the pie crusts first and then made a bright and yummy strawberry pie and then we made a juicy razzelberry pie (my own version is raspberries and blackberries in rasp. danish dessert) We each had a piece for an after school snack with some real whipped cream. Not on my diet plan but ooooh so good!

The Finish line is in Site

Well my kids have 7 more days of school left until the big three week summer break and I'm spending my time helping on field trips, making posters for reports (who doesn't love the Cricut for that) running things over to the school, visiting at the assemblies and next week is field day so I'll probablly be there then too. I haven't had any sub jobs in June and I'm sure I'll be off all of July and maybe start up in August. And WOW the weather is actually starting to warm up. I have had it with the rain and need the heat-NOW!
I'm so proud of my kids as they are all at the top of their classes and great readers (they better be as they have to read at least 15 minutes every night-but sometimes they read so much I have to tell them to go to bed after they have read for more than an hour). Tomorrow is the big Fantastic Falcon Award assembly and I already know that Sydney and Josh are gettting thiers so we just have to see if Nick will get his too (I hope so or we will have a really sad kid on our hands) So when time off hits we make sure to take it easy and have lots of fun. We are going boating, 4 wheeling and just letting them play and be kids. Yeah Summertime!

Timpanogas Hike










Well I went with my daughter Sydney on her field trip to Timpanogas cave and well let's just say "it was quite the jaunt up the hill". I haven't been since I was a teenager and it was a little steep to say the least. I got to watch over three 5th grade girls and make sure they didn't fall off the mountain or anything. Since I fast walk 4.5 miles everyday I thought it would be a breeze- NOT! Anyway here's some pics.
